I was looking at bento items since most of the time they're designed to be served room temperature but I'm not sure if I could make any of the things in mass quantity for a potlock...

Well, I don't know if mass quantity would be required.
Generally, if everyone brings enough for 1-2 people, there should be plenty of food for everyone

I think I've decided to bring teriyaki meatballs. I know chicken is more traditional but meatballs will be better as an apetizer or for a crowd.
